Baby Jesus Yule Log Cake

My mother did this variation on a classic yule log to celebrate the birth of Jesus at dinner on Christmas evening. It makes a beautiful centerpiece dessert on Christmas night. All of the kids would sing Happy Birthday to baby Jesus as she presented the cake. A fun holiday tradition.
Baby Jesus Yule Log Cake
- 1/2 cup sifted cake flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup white sugar
- 3 eggs, separated
- 1/4 cup milk
- 1/8 cup confectioners' sugar
- 1 1/2 cups whipped cream
- 2 cups heavy whipping cream
- 8 ounces of semisweet chocolate, melted (squares or chips)
- 1/4 cup butter, softened
- 1/8 cup confectioners' sugar
- Spray a 15x10-inch jelly roll pan with Pam for Baking, while you preheat the oven to 350 degrees.
- Sift together flour, cocoa, baking powder, and salt.
- Whip egg yolks and sugar until fluffy. Alternate milk and flour mixture as you mix together into egg mixture. Use low speed. Set aside.
- Whip egg whites at high speed until they form peaks. Fold egg whites into set aside batter in thirds. Spread batter into jelly roll pan.
- Bake at 350 degrees for 12-14 minutes.
- When the cake is done, turn it and trim the edges. Sprinkle with confectioners sugar. Then roll the cake (long side across the shorter side). Leave the seam down and cool the cake for 30 minutes.
- Prepare the frosting. Bring cream, melted chocolate, and butter to a boil in a small saucepan. Stir until blended, then remove from heat and let stand.
- Once cooled, unroll the cake and spread whipped cream on the cake up to 1 inch of the side. Reroll the cake.
- Frost cake.
- To decorate take a miniature plastic creche and place on top of the cake with a couple of fake evergreen twigs. Then write Happy Birthday Jesus on the cake with frosting tubes.
